Watermelon Radish Salad
INGREDIENTS
1 small head of Bibb or Butter lettuce – washed & torn
2 Watermelon Radishes – washed, sliced very thin (peeling optional but not necessary)
3 Guavas – cut into wedges (peeling & deseeding optional)
¼ cup lightly toasted chopped pecans
1 Tbsp fresh chopped chive
Crumbled Goat Cheese – to taste
DRESSING
2 Tbsp finely mince shallot
¼ cup champagne or white wine vinegar
3 Tsp Dijon mustard
1 Tsp Kosher salt
1/8 tsp fresh ground black pepper
2/3 cup Extra Virgin Olive Oil
In a small bowl whisk together all ingredients EXCEPT olive oil. Gradually stream in olive oil while whisking constantly. Dress salad & gently toss if serving immediately. If not serving immediately, cover & refrigerate dressing until needed. Remove from refrigerator and whisk thoroughly before dressing salad.
